Discovering the story behind one of the world’s most treasured botanicals

If you’ve ever baked a cake, stirred vanilla into porridge or opened a bottle of homemade vanilla extract, you’ve experienced one of the world’s most beloved aromas.


Sweet, warm and instantly comforting, vanilla has become so familiar that we rarely stop to wonder where it comes from. Yet behind every pod lies an extraordinary story of orchids, tropical forests, patient cultivation and meticulous craftsmanship.


I was reminded of this recently when my parents returned from Madagascar carrying one of the most thoughtful botanical gifts they could have brought home: a handful of beautifully fragrant Madagascan vanilla pods.


Before I even thought about making vanilla extract or infusing oil, I found myself appreciating the pods themselves. Long, dark and slightly glossy, they carried an aroma unlike anything from a supermarket bottle. Richer. Deeper. More complex. They were a reminder that vanilla isn’t simply a flavouring; it’s one of nature’s most remarkable botanical creations.


Whether you’re curious about cooking, natural perfumery, aromatherapy or simply enjoy learning about plants, vanilla has far more to offer than its familiar scent.


Let’s begin where every vanilla pod begins: with an orchid.


Vanilla isn’t a bean at all

One of the biggest misconceptions about vanilla is hidden in its everyday name.

We often talk about “vanilla beans,” but they aren’t beans at all.


Vanilla comes from orchids belonging to the genus Vanilla, making it one of the very few (if not only) edible products derived from the orchid family. The long “bean” is actually the cured fruit capsule of the plant after flowering.


There are over 100 species of Vanilla orchids, but only a handful are cultivated commercially. The best known is Vanilla planifolia, often called Bourbon or Madagascan vanilla, which is prized for its rich, creamy aroma and accounts for the vast majority of the world’s vanilla production.


Unlike many herbs used in aromatherapy, vanilla is a climbing vine rather than a small flowering plant. In tropical forests it can grow for many metres, using surrounding trees for support while producing beautiful pale green or creamy-yellow flowers.

Each flower opens for just a single day. If it isn’t pollinated during those few precious hours, it simply withers and no pod develops.


For a plant that has become one of the world’s favourite flavours, that’s a surprisingly narrow window of opportunity.



How Madagascar Became the Vanilla Capital of the World


Although vanilla is native to Mexico and parts of Central America, today around three-quarters of the world's natural vanilla is grown in Madagasca. For many people, Madagascan vanilla represents the gold standard.


After the Spanish conquest of the Aztec Empire in the 16th century, vanilla was taken to Europe alongside cacao, where it became prized as a flavouring for chocolate, desserts and perfumes. From there, colonial trade routes carried vanilla plants to tropical regions around the world, including islands in the Indian Ocean.


The island’s warm climate, seasonal rainfall and rich soils provide ideal growing conditions for Vanilla planifolia. But climate alone doesn’t explain its reputation.

Every vanilla pod represents an astonishing amount of human care.


Unlike many crops, vanilla cannot simply be planted and harvested mechanically. The vines require 3-4 years to mature, each flower is pollinated by hand, the developing pods take many months to ripen, and the curing process that creates vanilla’s familiar aroma can take several more months.


By the time a single pod reaches our kitchen, or bottle of oil reaches our shelves, dozens of careful decisions and hundreds of hours of skilled work have already taken place. It’s little wonder that vanilla is often considered the world’s second most expensive spice after saffron.


Did you know?

Although Madagascar is now the world's leading producer of vanilla, the plant is actually native to Mexico and Central America. For many years, vanilla vines grown outside Mexico flowered but produced very few pods, because their natural pollinators were absent. That changed in 1841, when Edmond Albius, a 12-year-old enslaved boy on Réunion, discovered a simple method of hand pollination. His technique made it possible to cultivate vanilla successfully outside its native range.

The remarkable journey from flower to fragrant pod

Fresh vanilla pods don’t actually smell like vanilla. When harvested, the pods are relatively green and have only a faint aroma. The characteristic scent develops during a lengthy curing process that combines heat, humidity, careful drying and weeks of conditioning.


As enzymes naturally break down compounds within the pod, hundreds of aromatic molecules begin to develop. The best known is vanillin, but genuine vanilla contains well over 200 different volatile compounds that contribute to its rich, rounded fragrance. This complexity is one reason natural vanilla smells so much softer and more nuanced than synthetic vanillin alone.


In many ways, curing vanilla resembles the ageing of fine tea, cocoa or wine. Time isn’t simply preserving the harvest, it is creating the aroma itself.

Vanilla in Aromatherapy: Is There Really a Vanilla Essential Oil?

The short answer is no... at least not in the traditional sense.


By the strictest botanical definition, only steam-distilled (and cold-pressed citrus) oils are considered true essential oils.


Vanilla simply doesn't give up its beautiful aroma through steam distillation. Instead, specialist extraction methods are used to capture its complex fragrance, producing vanilla absolutes and CO₂ extracts rather than a traditional essential oil.


So while you'll often hear people refer to "vanilla essential oil," what they're usually describing is one of these aromatic extracts.


Understanding the different types of Vanilla

The terminology surrounding vanilla can be surprisingly confusing. Depending on the supplier, a bottle labelled "vanilla oil" could contain several very different products.


Vanilla Absolute

Vanilla absolute is perhaps the product most commonly used in natural perfumery. It is produced by extracting cured vanilla pods with a solvent before further processing removes most of that solvent, leaving behind a highly concentrated aromatic extract. The result is rich, warm and beautifully complex, with far greater depth than synthetic vanilla fragrance.


Vanilla CO₂ Extract

A newer alternative is CO₂ extraction, which uses pressurised carbon dioxide to dissolve the aromatic compounds from the pods. Many practitioners consider CO₂ extracts to capture the aroma of fresh vanilla particularly well, often producing an extract that smells remarkably close to the cured pods themselves. Because no high temperatures are involved, delicate aromatic compounds are often preserved more effectively than with some other extraction methods.


Because vanilla's characteristic aroma can't be obtained through steam distillation, absolutes and CO₂ extracts have become the preferred way of capturing its fragrance. Although they aren't technically essential oils, they are widely used by aromatherapists and natural perfumers for exactly the same reason: they allow us to experience the plant's aromatic character in a way that steam simply cannot.

Vanilla Oleoresin

Vanilla oleoresin is another concentrated extract that may appear in aromatherapy products and natural cosmetics. Technically, an oleoresin isn't an essential oil either. It contains both volatile aromatic compounds and heavier resinous constituents, giving it a thick, syrup-like consistency. Some suppliers dilute vanilla oleoresin in jojoba or another carrier oil to make it easier to blend and use.


Vanilla Infused Oil

If you're making vanilla at home, this is likely the preparation you'll enjoy most.

Rather than extracting volatile aromatic compounds alone, whole vanilla pods are steeped in a carrier oil such as jojoba, sweet almond or fractionated coconut oil over several weeks. The resulting oil develops a delicate vanilla aroma and makes a beautiful base for massage oils, body oils, lip balms and botanical perfumes. It's simple, satisfying to make, and a wonderful way to appreciate the fragrance of real vanilla pods.


Vanilla Fragrance Oil

Finally, there are vanilla fragrance oils.

These are designed to reproduce the familiar scent of vanilla rather than preserve the chemistry of the plant itself. Many rely largely (or entirely) on synthetic vanillin, the compound responsible for vanilla's characteristic sweetness.

There's nothing inherently wrong with synthetic fragrance if your goal is simply to perfume a candle or soap. However, fragrance oils are fundamentally different from botanical extracts and are not suitable substitutes if you're looking for products derived directly from the vanilla orchid.


Why this matters

Understanding these differences helps explain why two bottles labelled "vanilla oil" can vary so dramatically in aroma, composition and price.


One may contain a genuine botanical extract. Another may be an infused carrier oil. Another could consist largely of synthetic fragrance.


So What About dōTERRA Madagascar Vanilla?

Although it sits alongside doTERRA's essential oils, Madagascar Vanilla is not a traditional steam-distilled essential oil. Instead, cured Madagascan vanilla pods undergo a specialised extraction process to produce a rich vanilla extract, which is then blended with fractionated coconut oil (caprylic/capric triglyceride) to create a ready-to-use aromatic product.


Rather than being a compromise, this is simply the most effective way to capture vanilla's beautifully rich and complex aroma. Different botanicals require different extraction methods, and vanilla is one of those plants whose unique chemistry is best preserved without steam distillation. Understanding this helps us appreciate that not every aromatic plant can or should be treated in exactly the same way.

The Chemistry of Vanilla


Vanilla is one of the most chemically complex aromatic plants known, with more than 200 identified aroma compoundscontributing to its characteristic fragrance. This remarkable complexity is one of the reasons genuine vanilla smells so much richer and more nuanced than artificial vanilla flavouring, which has largely replaced natural vanilla because it is quicker and far less expensive to produce.


The best-known of these compounds is vanillin. It provides the sweet, creamy note that most of us instantly recognise as "vanilla", but it tells only part of the story.


Real vanilla is far more than vanillin alone. Alongside it are hundreds of naturally occurring compounds that contribute warm, woody, balsamic, floral and softly spicy notes, creating an aroma that continues to unfold the longer you spend with it.


One of the most fascinating things about vanilla is that freshly harvested pods contain very little vanillin at all. Instead, much of the familiar aroma develops slowly during the traditional curing process, as naturally occurring enzymes transform precursor compounds into vanillin and many other aromatic molecules.

In other words, vanilla isn't simply harvested, it is patiently created.


This also explains why synthetic vanilla rarely smells quite like the real thing. Synthetic vanillin successfully recreates one important aroma molecule, but genuine vanilla is far more complex. It's the combination of hundreds of naturally occurring compounds that gives real vanilla its unmistakable depth, warmth and richness.

Vanilla in Aromatherapy


Unlike lavender or peppermint, vanilla isn't typically chosen for one specific therapeutic action. Instead, it is valued for the atmosphere it creates. Few aromas are as universally recognised as vanilla.

Aromatic Profile

Top impression: Sweet, creamy and familiar.

As it develops: Warm, balsamic and softly woody.

Background notes: Gentle spice with subtle floral nuances.

Aromatic note: Base note.

Overall character: Rich, comforting, smooth and quietly luxurious.


For many of us, it evokes memories of baking, celebrations, warm kitchens and home. Unlike some essential oils that smell medicinal or unfamiliar, vanilla feels instantly welcoming.


Part of this is cultural, we encounter vanilla from childhood in cakes, biscuits, ice cream and desserts, but neuroscience also tells us that our sense of smell has particularly close connections with the parts of the brain responsible for memory and emotion. A familiar aroma can transport us back to a person, a place or a moment in an instant.


That means the comfort we experience when we smell vanilla isn't simply a result of its chemistry. It is also shaped by our own memories, experiences and emotional associations.


This may help explain why vanilla has become such a popular ingredient in perfumes, candles, skincare and aromatherapy.


Although laboratory studies have identified antioxidant, antimicrobial and anti-inflammatory activity in vanillin and several other naturally occurring compounds, much of this research has been carried out in laboratory or animal models rather than human clinical trials. Current evidence suggests vanilla aroma may help promote relaxation, improve mood and reduce perceived stress in some settings, although the research remains relatively limited compared with essential oils such as lavender.


For me, vanilla's greatest strength isn't that it promises dramatic physiological effects. It's that it quietly transforms an ordinary moment into one that feels warmer, softer and more comforting.

Emotional & Spiritual Correspondence


While scientific research helps us understand vanilla's chemistry, many aromatherapists also enjoy exploring the symbolic and emotional qualities of aromatic plants. These correspondences are rooted in traditional practice and personal reflection rather than clinical evidence, and should be viewed as an invitation to connect with the plant in your own way.


For me, vanilla has the obvious sense of being an aroma of comfort, emotional safety and warmth. It also speaks of patience.


Unlike many botanicals, nothing about vanilla can be rushed. The vine takes years to mature. Each flower opens for just a single day and, in almost all cases, must be pollinated by hand. The pods then spend months developing before the curing process slowly transforms them into the fragrant spice we know and love.

Perhaps it's no surprise, then, that vanilla reminds us to slow down, trust the process and appreciate that some of life's richest rewards take time.


Vanilla also speaks of sweetness, not simply in flavour, but in the way we move through life. It encourages us to soften our edges, notice simple pleasures and receive moments of joy without feeling the need to hurry on to the next thing.

In personal blending, I often think of vanilla as an aroma of home, contentment and quiet abundance. It doesn't demand attention or overwhelm the senses. Instead, it gently enriches whatever it touches, bringing warmth, depth and harmony to a blend.


Whether you experience vanilla as grounding, nurturing or simply reassuring, its greatest lesson may be that there is beauty in slowing down and allowing good things to unfold in their own time.

Blends Well With


One of vanilla's greatest strengths is its ability to soften, round and harmonise a blend. In natural perfumery it is often described as a base note, helping to anchor more volatile aromas and add warmth and depth.


It pairs beautifully with:

Citrus oils: Sweet Orange, Wild Orange, Bergamot, Mandarin and Lime.

Floral oils: Lavender, Rose, Ylang Ylang and Geranium.

Woods and resins: Sandalwood, Hinoki, Cedarwood, Frankincense and Benzoin.

Spice oils: Cardamom, Ginger and a touch of Cinnamon Bark (well diluted).

Safety


Vanilla is generally considered a gentle aromatic ingredient when used appropriately. As with all aromatic extracts, follow the manufacturer's guidance regarding dilution and application.


If using a concentrated vanilla absolute or CO₂ extract, avoid applying it undiluted to the skin unless the product has already been diluted by the supplier. Products such as dōTERRA Madagascar Vanilla are supplied pre-diluted in fractionated coconut oil and are intended for direct topical use according to the manufacturer's recommendations.


Remember that vanilla fragrance oils are not the same as botanical vanilla extracts and should not be substituted in aromatherapy or topical preparations unless specifically formulated for that purpose.


As with all essential oils and aromatic extracts, discontinue use if irritation occurs and seek professional advice if you are pregnant, breastfeeding or have a significant medical condition.

Practical Ways to Enjoy Vanilla

One of the joys of vanilla is that very little goes to waste. Even after making extract, the pods can often be dried and added to sugar, infused into oil or tucked into a jar of tea leaves to impart their lingering fragrance.
